Zucchini and Mushrooms with Grass-Fed Beef

You will need:

2 medium zucchini, sliced

1/2 yellow onion, diced

2 cloves garlic, minced

1 sprig oregano, 1 sprig basil

1/2 cup mushrooms, sliced

pinch salt

1-2 Tbsp olive oil

Leftover burger mixture (~1/2 lb) from yesterdays burgers (for recipe click here)

Leftover tomato sauce (for recipe click here) (or just use a little tomato paste)

In a frying pan, heat 1 Tbsp oil, onions, and salt and cook for 5 min. Add mushrooms and garlic and cook five more min. Add zucchini and cook for about 10 min. Add herbs. Remove from the heat and cover (zucchini not be mushy when you do this, it will continue cooking). Add a little more oil to the pan and brown the beef mixture. Add the tomato sauce and cook until done. Top the zucchini with the meat sauce and garnish with basil leaf.
