Slow Pot Roast with Tomatoes

2 lbs arm roast (I used Scottish Highland Grass-fed from Blue Gentian)

1 yellow onion, sliced

5 cloves fresh garlic, peeled and left whole

pinch salt (optional) and/or pepper

1 can diced tomatoes

1 can whole peeled tomatoes (14 oz cans)

2 Tbsp dried California basil

4 stalks celery, diced

Place all ingredients in a slow-cooker and cook on “low” for about 7 hours.
