Broccoli for Breakfast

You will need:

1 head broccoli

1 large egg (from a reliable source)

water for steaming and poaching

Sauce:

2 small lemons

2 Tbsp roasted unsalted tahini (sesame seed butter)

2 Tbsp extra virgin olive oil

lemon pepper (no salt)

1 Tbsp water

Steam the broccoli until it is very soft. Normally I would leave the broccoli a little crunchy by stopping the cooking when it is bright green, but since it is morning and the tummy hasn’t quite gotten used to being awake, I went with a longer cooking time.

Bring a pot of water to a boil (enough to cover one egg) and crack an egg into the water. Poach the egg for 3 min or until desired doneness.

To make the sauce, blend together tahini, juice from the lemons, zest from the lemons, olive oil, water, and lemon pepper. If the sauce is too thick add water, if it is too thin add tahini. (optional, add salt)
